Fairtrade banana and ginger brownies
Today is World Fairtrade Day, and to celebrate I decided that making (and eating!) some Fairtrade brownies would be a good idea.
These particular brownies are banana and ginger ones, and have a lovely hint of chocolate too without being too rich. Here is how you can make them:
Ingredients
150g unsalted butter
250g fairtrade soft brown sugar
100g fairtrade chocolate with ginger, broken into small pieces
1 tsp fairtrade vanilla extract
300g plain flour
1tsp baking powder
1tsp ground ginger
Pinch of salt
3 large fairtrade bananas, peeled and sliced
Method
Preheat the oven to 180C (fan 160C) and grease and line a 20×20 baking tin.
In a large saucepan, melt the butter and sugar over a low heat, and stir until well mixed.
Add the chocolate and allow it to melt into the mixture, stirring gently. Add the vanilla extract.
Sift together the flour, baking powder, ground ginger and salt and then fold into the mix, until just combined. Do not overmix.
Pour half the mix into the pre-prepared tin and then arrange two of the sliced bananas over the top in rows. Add the rest of the mix (smooth over using a metal spoon that has been placed in hot water for a few seconds) and decorate with the remaining sliced banana.
Put the brownie in the oven and bake for around one hour, then remove and leave it to cool completely before cutting into squares.
