Fruity Christmas Fudge

christmasfudgeWhat you will need:

  • foil and a square pan (silicone is good) about 20cm square
  • 1 teaspoon butter, and 60g butter
  • 2-1/2 cups icing sugar
  • 2/3 cup milk
  • 200g white baking chocolate, chopped
  • 1/4 teaspoon vanilla essence 
  • 3/4 cup sliced almonds, toasted
  • 1/4 cup chopped dried apricots
  • 1/4 cup dried cherries
  • 1/4 cup dried cranberries

What to do with it:

  • Use the foil to line the pan and grease it with the teaspoon of butter.
  • Grab a large saucepan, tip in the icing sugar, milk and butter and then stir over a medium heat until the butter has melted and everything is combined. Bring to the boil, then leave boiling for 5 minutes and DO NOT STIR.
  • After the five minutes, reduce the heat to low, then stir in white chocolate until melted.
  • Remove from the heat, stir in vanilla extract. Then fold in the almonds and dried fruit, before spreading the mixture into the pan as quickly as possible.
  • Leave in the fridge for 2 hours, or until set.
  • Lift the fudge out of the pan, remove the foil, then cut the fudge into bite-size pieces.
  • Enjoy!
