Farmhouse Breakfast week – with Denhay Farms
It’s Farmhouse Breakfast week. I may not live in a farmhouse (even if it does somewhat resemble a pigsty at the moment) but we certainly do like breakfast – and thanks to Denhay Farms, who sent us a big box of yummy breakfast things – we have the opportunity to pretend that our 3 bed terrace is in fact a farmhouse with roaring fire and a pantry bursting with huge legs of ham and jars of pickles. At least, that’s how I imagine it would be.
With Denhay Farm bacon, Spoilt Pig sausages, Clarence Court Burford Brown eggs, a generous handful of mushrooms and some Tracklements tomato ketchup, HP sauce and salsa sitting in front of me – and two small children who refuse to eat cooked breakfast in it’s usual everything-cooked-and-on-a-plate form – I was inspired to create a breakfast fusion…and so the breakfast pizza pancake came into being.
First I cooked the sausages. They smelt lovely, and I was kind of tempted to just scoff them all myself (is there anything like good quality pork sausages warm from the oven dipped in some lovely ketchup?).
Luckily for the kids and their hungry, beseeching eyes, I managed to refrain from having anything but a nibble and chopped the sausages into slices for them.
Next, the pancake batter. I used self raising flour instead of plain to make the batter a bit thicker – better for a ‘pizza’ base – and then added some milk and a Clarence Court egg. The kids loved the eggs as they have little crowns printed on them – we saved the rest to use as dippy eggs with soldiers, despite the Wee Man’s attempt to grab them and add them into the mix.
Once the pancake had set a little, I spread some salsa over the top, then sprinkled it with chopped bacon, mushrooms, sliced sausage and finally, a bit of cheese.
Two minutes later and our breakfast pizza was complete. Yummy 🙂
Two happy children and two empty plates. Just goes to show, breakfast doesn’t have to be boring!
