Chocolate chip, orange and ginger tear and share bread

Having watched this weeks Great British Bake Off, which was all about bread, I decided to have a go at making my own sweet tear and share bread. Chocolate, orange and ginger are three of my favourite flavours and work well together, so I made up a recipe and gave it a go:

Ingredients:

125ml warm water
50ml orange juice
400g strong white bread flour
3tbsp light brown sugar
2tbsp melted butter
1tsp ground ginger
1tsp salt
Grated rind 1 orange
100g chocolate chips
30g finely diced stem ginger

Mix together the flour, sugar, ginger and salt in a bowl. Make a well in the middle and add the yeast, then add the water, orange juice and melted butter. Stir until well combined. Add the stem ginger, orange rind and chocolate chips and stir until mixed in.

Turn out the dough onto a well floured surface and knead for at least 5 minutes, until the dough is not sticky. Then put in a lightly oiled bowl, cover with clingfilm and leave to rise for an hour or so.

Remove the dough, separate into several small portions and roll them into ball shapes before squashing them all together in a ring.

Bake in a preheated oven at 180c for around 50 minutes.

Serve warm with a smear of ginger preserve, yummy!
