Fruity Christmas Fudge
- foil and a square pan (silicone is good) about 20cm square
- 1 teaspoon butter, and 60g butter
- 2-1/2 cups icing sugar
- 2/3 cup milk
- 200g white baking chocolate, chopped
- 1/4 teaspoon vanilla essence
- 3/4 cup sliced almonds, toasted
- 1/4 cup chopped dried apricots
- 1/4 cup dried cherries
- 1/4 cup dried cranberries
What to do with it:
- Use the foil to line the pan and grease it with the teaspoon of butter.
- Grab a large saucepan, tip in the icing sugar, milk and butter and then stir over a medium heat until the butter has melted and everything is combined. Bring to the boil, then leave boiling for 5 minutes and DO NOT STIR.
- After the five minutes, reduce the heat to low, then stir in white chocolate until melted.
- Remove from the heat, stir in vanilla extract. Then fold in the almonds and dried fruit, before spreading the mixture into the pan as quickly as possible.
- Leave in the fridge for 2 hours, or until set.
- Lift the fudge out of the pan, remove the foil, then cut the fudge into bite-size pieces.
