Kiwi Christmas – Chocolate Jaffa Torte
- 300g double chocolate chip cookies
- 50g butter, melted
- 250g dark chocolate
- 2 tbsp golden syrup
- 568g double cream
- zest of a large orange
- 1/2 tsp ground cinnamon
- a couple of slices of dark chocolate orange, or other dark orange chocolate
- jaffas (or an alternative chocolatey decoration)
What to do with them:
- Bash up the cookies into little crumbs, add the melted butter and then press the resulting mixture into a 20cm springform tin to make a base for the torte. Put in the fridge to set for a bit.
- Next, break the chocolate into small pieces, and put in a large heatproof bowl. Spoon in the syrup, pour in about a quarter of the cream, then stand the bowl over a pan of hot water on the lowest possible heat and leave until the chocolate has melted – this may take a few minutes.
- Remove the bowl from the pan, stir the ingredients together and then leave it to cool.
- Whip the rest of the cream in a large bowl and add the cinnamon, until the cream is wobbly but not stiff – drips from your whisk should disappear back into the mixture within a couple of seconds.
- Fold the cream and the cooled chocolate mixture together, then add grated orange zest. Keep folding the mixture together until it has a stiffer, velvety texture.
- Pour the mixture on top of the base, smooth out the surface and leave in the fridge for a couple of hours.
- Unclip the tin, place the torte on a serving plate and then put jaffas all around the edge of the torte, before shaving small pieces of chocolate orange across the top to decorate.
