Cookie monster

Meeting with a friend this morning, it was mentioned that for Bubby D’s ‘new parents group’ Christmas Party tomorrow, we are required/being nudged in the direction of/kindly asked* to bring with us a baked offering of some description. I’m assuming that this is for the benefit of the mummies, since Bubby D is only 16 weeks and as yet not enjoying items of the baked variety, except of course through the medium of mummy’s milk (and there’s a lot of baking goodness packed into that, I can tell you! : licks lips : )

So, in a minor panic given the very short notice, I riffled through my cupboard of ingredients and decided upon cranberry and white chocolate chip cookies. YUM! Quick, fairly simple and frankly delicious, they tick all the boxes. Since it’s Christmas, I’ve added a little bit of sparkly bling into the mix in the form of a splash or two of glace icing.

Should you wish to give them a go too, here’s where I share the love:

1/ Preheat the oven to 180 degrees

2/ Melt 150g butter and leave it to cool.

3/ Mix together 150g plain flour, 1/2 tsp bicarbonate of soda, 50g brown sugar, 50g caster sugar, 50g ground almonds, 50g oats, 50g dried cranberries, and 100g of white chocolate chips. (With those ingredients, how could they not be tasty!)

4/ Grab an egg yolk, and mix it in to the cooled butter before mixing that into the dried ingredients.

5/ Form the mixture into £2 coin sized balls and flatten them slightly, placing them onto a tray lined with greaseproof paper about 3 cm apart, and stick it in the oven for 6 to 8 minutes.

6/ When they are lightly browned, bring them out and let them cool.

7/ Once they’re cooled, make a little glace icing with a tablespoon or two of icing sugar, a drop of water and a sprinkle of edible glitter, and drizzle it across the top of the cookies.

8/ Eat the cookies. Mmm….
